Coffee Grind Size Chart: Every Brew Method, Explained

Grind size is the dial with the least room for excuses.

Ratio you can eyeball. Water temperature forgives a few degrees. Grind size does not, a bag of beautiful coffee, ground wrong, tastes like a mistake no matter how careful everything else was. Get it right and the same bag opens up.

Here is where to start for each method, and why Singapore's air quietly moves the target for all of them.

Grind size, by brew method

Flash brew, over ice Medium-fine, same family as pour-over ~400–700 microns This one surprises people. Flash brew is a hot extraction finished in about three minutes — the same short contact time as any pour-over — so it wants the same grind, not the extra-coarse grind a true cold steep needs.
Flat-bottom drip machine Medium — like regular sand ~600–900 microns A flat basket lets water pool rather than draw through a point, so it tolerates — and wants — a touch coarser than a cone.
Siphon Medium to medium-coarse ~600–1,000 microns A cloth or metal filter needs particles too large to slip through, but the constant agitation of the brew speeds extraction, so it doesn't need to run as fine as pour-over.
French press Coarse — like coarse sea salt ~700–1,200 microns A four-minute steep with no filter beneath it needs particles too large to slip through the mesh and muddy the cup.
Cupping Medium, an SCA specific ~750–850 microns The Specialty Coffee Association's cupping protocol targets 70–75% of particles passing a US #20 sieve — the one number on this table with an actual published standard behind it.
Cold brew Extra coarse — like peppercorns ~800–1,600 microns A 12–24 hour steep is the slowest extraction here by a wide margin, so it needs the coarsest grind to avoid pulling everything bitter. Chemex Medium-coarse — like coarse sand ~900–1,300 microns The bonded paper filter is considerably thicker than a standard cone filter, so it already slows the water down on its own — a finer grind on top of that would over-extract fast.

This chart is not one official standard (cupping is the exception, with a genuine SCA figure behind it). The rest is where most roasters and equipment makers converge, cross-checked across several published sources rather than lifted from one. You know what? We can discuss every time.

Why grind size does the heavy lifting

Water is a patient solvent. Give it more coffee surface to work with (a finer grind) and it pulls flavour out faster. Give it less, and it takes longer.

Everything else about a brew method is really just a way of managing that one relationship, how much surface area, meeting water, for how long.

This is also why grind size is not a variable to guess at twice. Change your ratio and you have changed the strength of the cup. Change your grind and you have changed whether the coffee had time to say what it wanted to say.

One dial deserves more respect than the other, grind first, and let the rest follow from there. It sits alongside temperature, time, ratio and agitation as one of the five dials that shape a cup, the fuller picture of how those five work together lives in our brew ratio guide.

One more thing worth carrying over from there, the right grind moves as your coffee rests. A bag within its first two weeks is still full of carbon dioxide pushing back against the water, so we lean slightly finer to help the extraction along. By week three or four, once the gas has settled, we ease it coarser, the same coffee, asking for something different.

Grinding in Singapore's climate

Here is something no grind chart written for a drier country will tell you.

Coffee is hygroscopic. It pulls moisture from the air around it. In humid conditions, beans soften slightly before they even reach the burrs, which changes how they fracture, more fines, more clumping, a grind that behaves less predictably than the same setting would on a dry day.

Singapore does not get the seasonal swing most of these charts are written for. It is humid nearly year-round, which means the honest starting point here already sits a touch coarser than a chart calibrated for a drier climate, not something you adjust for occasionally, but something to build in from the start.

The practical fix is different, too. Most grind guides reach for the Ross Droplet Technique (a spritz of water on the beans before grinding) as the fix for static and clumping. It is a real technique, not a myth, and it will not hurt anything here. But the research behind it found a threshold, ambient humidity above roughly 60% already does most of that job on its own, and Singapore sits well past that mark most days of the year.

So the effort is better spent elsewhere, breaking up clumps after the grind, not preventing static before it. A quick stir or a distribution tool through the grounds earns its keep here in a way a water spritz mostly will not.

Nanyang kopi, ground differently

Kopi is just the word for coffee, but order one at a kopitiam and you get something specific, dark, wok-roasted robusta, pulled through a cloth sock filter, sweetened with condensed milk.

It looks like it should be ground fine to stand up to all that. It isn't. Traditional kopi wants medium to medium-coarse, finer than that clogs the sock and turns the cup bitter before the milk gets anywhere near it. The strength comes from elsewhere, a generous ratio, and the coffee pulled back through the sock more than once. Not from grinding it fine and hoping.

We roast and brew differently here, arabica-forward, filter and espresso, precision over quantity. The two traditions are not in competition. Grind size is just one of the places you can watch each one solve the same problem, a good cup, by a completely different road.

Reading the cup

The chart gets you close. Your palate gets you the rest of the way.

Sour, thin, quick to finish, under-extracted. Go one step finer, or give it slightly longer.

Bitter, dry, harsh on the way down, over-extracted. Go one step coarser, or pull it back.

Move one setting at a time, taste, then move again. If you have just been through the roast-age or humidity adjustments above and the cup still is not right, this is where to look next, not before.

Burr, not blade

One thing has to be true before any of this means anything, the grinder itself has to be capable of hitting these numbers consistently.

Blade grinders chop rather than grind, the same ten seconds in the machine can leave some particles as dust and others nearly whole, in the same batch. No amount of careful chart-reading fixes an inconsistent grind at the source.

A burr grinder, conical or flat, crushes beans to a size set by the gap between two surfaces, which is the only way a chart like this one means anything at all.

FAQs

What is the best grind size for espresso?

Fine, around 200 to 400 microns, similar to table salt. Dial it in the way any espresso shot gets dialled in: small adjustments, one at a time, tasting after each.

What grind size should I use for a pour-over?

Medium-fine, roughly 400 to 700 microns for a cone-shaped brewer like a V60, finer than French press, coarser than espresso.

What about AeroPress?

Start medium-fine, close to a pour-over, then feel free to move more than you would with other methods, AeroPress technique (inverted, long-steep, quick-and-classic) changes the right grind more than the device itself does.

Does humidity really change how coffee grinds?

Yes. Coffee absorbs moisture from the air, and humid conditions make beans soften and clump more readily when ground. In Singapore's climate, that means starting slightly coarser than charts written for drier countries, as a baseline rather than an occasional fix. But test first. There’s no harm in doing all these things if it’s part of your routine, as long as the coffee is enjoyable.

Is kopi ground finer than specialty coffee?

No, a common assumption, and the wrong one. Traditional kopi is medium to medium-coarse, brewed through a cloth sock filter that clogs if the grind runs too fine.

Why does flash brew use a finer grind than cold brew?

Because it is not the same process. Flash brew is a fast, hot extraction over ice, finished in minutes, closer to pour-over than to a slow, cold, hours-long steep, so it wants a similar grind to pour-over, not the extra-coarse grind cold brew needs.

How do I know if my grind is wrong?

Taste tells you first. Sour and thin points finer. Bitter and harsh points coarser. Adjust one step, taste again, and let the cup lead.
