A cup that drifts somewhere between a florist's counter and a tea house. Rose Nebula opens with a wash of rose and ripe lychee, then passion fruit lifts the acidity before a long, gentle finish of peach oolong.
This lot comes from Yingjiang County in Dehong, on Yunnan's western edge near the Myanmar border. Catimor is the workhorse variety of Yunnan, but careful processing takes it somewhere unexpected here. The cherries are fermented with selected yeast in a sealed, oxygen-free environment, then dried whole as a natural. That controlled fermentation pushes the florals forward and gives the cup its juicy, perfumed body, while keeping it clean.
We've roasted it light for filter to keep those delicate aromatics intact. Brew it as a pour over and let it cool a little; the oolong and peach come through more as it does.

After 2nd try, noticed the taste note aroma quite visible but not much noticeable when the coffee cool down. Will try to adjust the grind and observe.
